Enzymes traditionally were found in both animal and plant-based foods.  Unfortunately, due to modern growing techniques, genetically modified foods, pesticides, animals with poor diets, and several other practices that devastate nutrients, our diets no longer naturally contain the enzymes that our great-grandparents got in their foods.  Foods once considered rich in enzymes now have few.  In addition to the food itself being a problem, the modern diet contains very few enzyme-rich foods, and preparation techniques further exacerbate the problem.  Because cooking breaks down enzymes, a good diet must contain a measure of raw foods and/or cultured or fermented foods in order to ensure adequate enzymes.

Without enzymes in our food, the body must get them from elsewhere or the job of complete digestion goes undone.  To a small extent, we can produce some metabolic enzymes in the liver, or digestive enzymes in the pancreas.  The body also stores some enzymes for later use.  Taking from these sources will work for a time, but they are very limited, so when they run low, our food does not digest properly.  Also, little ones' developing digestive systems are still working to begin to produce enzymes, and need support to digest foods they encounter.  The end result is poor nutrition, fatigue, and weakened immune system.  And as if that weren't enough, the undigested food also can actually become toxic inside the body, causing damage to the digestive system and other organs.
